Short courses from ISI and Odum
International Statistical Institute (ISI) is hosting a series of online courses that may be of interest. They are paid courses but the fees are reasonable, if you're interested in the specific topics. You may be able to find similar courses on Coursera too. In this case the courses might be serve as inspiration. https://www.isi-web.org/events/courses/short-2021
I also really like the courses offered through the Odum Institute. Their short courses run according to the academic year so you can look out for them again in September (https://odum.unc.edu/events/2021-09/).
Odum also has some other resources and they sponsor Data Matters, an event occurring in August. Again, I'd suggest checking out Coursera since you already have access to these courses but if you're looking for a more hands-on session related to Data Science skillsets then I'd suggest checking out the registration that is open for Data Matters: https://datamatters.org/registration/
